Craving Dill Pickles

Having been to vegas a few time, I was surprised I had never tried these or seen these before.  An amazing combination called deep fried dill pickles!

We found them at a place called BB Kings, which served amazing bbq and southern inspired cuisine.

Deep Fried Dill Pickles

Here is a picture of these delights a total party in my mouth. delicious totally unhealthy crispy on the outside but juicy on the inside dill pickles.

Well the other day I was having made cravings for something like this, since I am trying to eat somewhat on the healthy side I made a version of these. Instead of deep fried they are baked, and instead of crazy mass amounts of salt etc I used some spices to kick it up a notch!

So here is a reciepe and picture for Baked Dill Pickles… According to my BF they turned out great and he loved them and asked me if they were any left over.

Oven baked dill pickles:

  • 1 Jar of  sliced oval dill hamburger pickles, I picked low salt w/ garlic!
  • 1/2 cup of Panko crumbs
  • 1/4 cup of cornmeal
  • 1/4 cup of flour
  • 1/4 tsp of smoked paprika
  • 1/2 tsp chipotle powder
  • 1/4 cup dried parsley
  • 1/4 tbsp of dried chili flakes ( I am a hot sauce freak so I put extra hot sauce in everything!)
  • Pinch of  salt
  • 1 large egg
  • 1 large egg white
  • olive oil spray (about 1 tsp)

For the  Healthier Ranch Dip:

  • 2 cups fat free Greek yogurt
  • 1/2 cup low fat sour cream
  • 1/4 tsp garlic powder
  • 1/4 tsp onion powder
  • 1/2 tbsp chopped fresh chives
  • Pinch of salt
  •  ground pepper to taste
  • 1 tsp white balsamic vinegar
  • HOT SAUCE! like Sirracha or Louisiana!

Make dip by combining all dip ingredients together into a bowl and then put in fridge until time to dig in.

Mix panko crumbs, flour along with paprika, parsley, chipotle powder, chili flakes and salt together.

Combine eggs in seperate dish.

Take pickle slices and dip into egg mixture, dip into dry mixture and press down on each side to ensure coated.

Heat over to  450°F,  spray sheet with some baking spray. Place pickles onto to baking sheets, spray top with a little bit of olive oil spray. Bake for 10-15 minutes on one side, flip and spray with olive oil and bake an addition 5-8 minutes.

I like mine a little bit crispier so I left them in a little bit longer, also everyone’s oven is different so just watch them and you can tell if they start to get to crisp or burn!!

Once done serve with dip, and voila a healthier version of Deep Fried Dill Pickles!

Hello out there…

Hello Out There…

This is my first / second blog to the world.  More like my second because I started another blog but didnt like the forum so I think I might delete it and just use WordPress.

I am a recently discovered “Foodie” or obsessed with making new recipes, reading food blogs, and researching food/drink combos. I am 29 almost 30, and live in Winnipeg MB. Originally from BC, this is the strangest place I thought I would ever end up in! So here I am for the time being sharing some of my newly found passions.

Surprisingly I seem to pretty good at cooking, which is sort of a shock to me as I never thought I was. Sometimes I fail but most of the time it ends up turning out pretty great!

So like all the other self proclaimed foodies out there I am sharing with you my experiences in what I make, and what I have read that I want to make on other blogs as well as delicious bites along the way! You will also probably get some insight into my life and some funny stories as well.

I hope it comes off as entertaining and the food comes out as delicious.

So most recently I am on a big health food kick as well as working out. Am trying to drop 10pds before I go away on holidays. Let me tell you with being a foodie that is hard! But I think I am doing pretty well at preparing delicious food that tastes great and is healthy for you!

I have been reading this one blog called Skinny Taste and decided to try one the recipes last night. It was an Asian Ginger Carrot Dressing, let me tell you this stuff is a huge party in my mouth.

I even took some for lunch today and dipped carrots in it! It was so good that I will probably become obsessed with it and make it all the time, perhaps tweak it a bit until I am 100% satisfied. But over all best dressing recipe I have tried in a while.

Sorry this post wasn’t super exciting, just wanted to put something out there and introduce myself!

Next one will have a great reciepe that I tried, Ive been obsessing about making my own salsa, so I will probably do that this weekend and blog about it. I can just taste the cilantro, garlic, fresh tomatoes in my mouth!
